I'll be flying Virgin from Orlando into Gatwick and don't know the prevailing winds there. What side of the plane is best to sit on for getting a great view of London? Thanks.
Flights arriving at LGW don't fly over central London - especially from the US they are likely to follow the south coast.

Agreed. I'll usually come in over Cornwall or North Devon, pretty much hug the south coast until I reach Portsmouth/Chichester, then head in towards home at LGW.

My suggestion would be to sit on the right hand side. Then you have a good chance of seeing Brighton before you head inland to LGW. In fact, you may be so lucky as to see it a few times if Gatwick is busy and you have to circle in the hold a few times!

My experience is sitting on the right side gives the best London views when coming in to LHR if the approach is from that side.
^ if all is not enveloped in drizzle/fog/low cloud/rain/snow (delete as applicable) as it has been on my last few trips...
