Metal Knives/Forks and China Plates - Logistics of

Hello,
Now that VS has brought back the metal knives and forks, and uses china plates, how do these get cleaned? I assume that they are just kept dirty untill they arrive at the destination and then cleaned on land. Does this mean that meals come prepacked with the plate then or is there a stack of plates. What if they run out of plates?
Does any of that make any sense?

Yes - when "proper" crockery and cutlery is carried it is used then stored and washed on land, usually at the catering company who provide the food service.
To answer the question about having enough they make sure that there is enough for each course and then have some spares - now I will just assume that their catering forecasting allows for spares and that they just dont run out[:I]

They'll need to have some dishwashers fitted on the A380 - imagine how many meals will be served - over a thousand on a full plane!
