Booked cars using miles about a week ago but so far no miles taken from my account - is this normal? When I've booked flights, the miles disappear immediately.

Only guessing, but Virgin use a third party - TriStar - for the CDC service. Maybe TriStar only update Flying Club every week or so with details of reward bookings, and the miles are deducted then.

I have not booked a CDC with miles personally - but I know that many VF members have, so someone more knowledgable will doubltess be able to advise.
