Was wondering if anyone knows which aircraft will be used for this flight to Barbados...

It's normally a LGW-based Boeing 747-400 but at certain times when there's demand for more UC seats they'll substitute a LHR-based Boeing 747-400.
If you've booked direct with VS you can access the seat map from the Manage My Booking page, which will let you work out which type of aircraft you're on.
If you mean which specific plane will operate the flight, no-one knows that until the day.

It says it's an A330 but, there's no upper class cabin.

If it's an LGW-based A333, they don't currently have UC cabins.
But they are due to have UC added over the coming months to bring them into line with the Heathrow A333s which already have the new UC suite which has divided opinion among V-Flyers.
