Around a month ago i was looking at some UC return tickets to New York. Wasn't able to book then due to unknown holiday leave which has now been confirmed.
Do mile seats ever come back up or is it a case once they have gone there gone?

Yes they can pop up at any time so keep checking back, every day if possible. And if they do, snap them up ASAP because they may not hang around for long.
New York tends to be one of the easier routes to find availability for as there are so many flights.

When I was looking at them about 4 years ago New york seats were plentiful, not sure if still true.
G seats become available about 11 months in advance, and may well disappear quickly. But they also appear much closer to the date as well. I had a more flexible set of timings (based around a week to see one of the three dates Van Halen played NYC), and I got mines 2 months before I flew... Set dates are obviously a little more problematic though.

Is PE available? You can always book one way UC and one way PE and hope for a G to show up and snap it up for miles + taxes. Or if you're paying cash and upgrading, buy an M (or S) on the way back and remain flexible

Also i dont fully understand concept with upgrading.
To my knowledge you cant upgrade if you say buy the cheapest ticket and can only be done with a flexible ticket?

That's correct but there are several different fare buckets that are flexible / upgradable / cancelable and some of those can be relatively cheap. See the Fare Codes in the tool box. There used to be a tool you could use to book these on the VS website but it appears to have vanished so you have to phone them for prices.
If you go down that route there still needs to be reward seats available in the cabin you want to upgrade too.

I've generally found an upgradeable economy to be a little bit less than the cheapest PE so not really worth using miles to upgrade to PE. The next step to Upper is when it becomes really worthwhile. IMHO
