I have miles + money flights to MCO booked in PE. If UC seats become available would it be possible to upgrade the seats using miles? I'm pretty certain I can't upgrade the return leg as it's a K class but the outward leg is S.

K no but S is fine (20,000 miles to UC if G availability)

You could always ring Flying Club and ask for a quote to change the K fare to the S bucket then use miles to upgrade it assuming there's G availability. Sometimes the cost is quite modest.

I thought you could only upgrade MPM with the cash and miles difference between the cabins so not as simple as just the miles to upgrade to a G. An MPM fare is (I believe) where the miles give you a discount against the fare in the cabin you choose so it would make sense you cannot simply use more miles to upgrade to the next cabin

Yes that's what I thought.

Can you get a MPM S fare code?

And it's 12,500 miles for a one way PE-UC upgrade or 25,000 for the return on the MCO route FYI.

No you can't.

To clarify, a MPM fare can only be upgrade with cash but not miles.
