Make sure your enter LGW as the starting airport as the default 'London' always pushes the online reward flight system over.

There's a reasonable amount of Economy reward inventory, a small amount of PE reward inventory and no Upper rewards in either Jan or Feb next year from LGW.

MAN is showing a lot less Economy reward inventory, but more Premium and several Upper reward flights so you may have better luck flying from / to MAN, if that is an option for you?

Th other option is flying to MCO via ATL from either LHR or MAN.

I would try for Upper on the alternative routes suggested. It does mean buying up-gradable economy tickets then the extra taxes come to about £900 each plus 50,000 miles each. (That's what I paid for my Feb flights but I booked them in April so managed to bag a couple of seats on the Gatwick MCO flights)
If you can't get any Upper rewards then I'd use the PE upgrades on economy reward seats.
I'd forget the companion ticket. As I understand it you have to buy from the most expensive bucket to use it.
Good luck,

Used to do this route all the time with the 2 kids.

I would buy one S class ticket in order to use the companion ticket in PE

Then use the 2 upgrade vouchers to PE

This way, all 4 of us would be in PE for little spend - the S class is only a little more than a K and you don't need to buy a W class to use the companion voucher
