Reward seats are loaded online at 05.00am the following day.
Call centre are 24 hours open so at 5am you can either book online or call.
I’ll be calling in a week or so for my return flight from LA

In terms of VS reward availability, what you see online is exactly the same as call centre agents see.
SkyTeam & partner airline reward availability is a different matter all together though as the call centre do see a lot more availability for those.

Theres a difference between "release" and general availability.
Release is referring to the seats loaded 330 days in advance. I.e. the guaranteed availability.
After this, seats show up dynamically based on flight load. And this changes on an hour by hour basis. Even more so when you're close to departure. These seats that are showing up dynamically can be booked at any time, 24/7 and can even be done at the airport - although the staff have to call GTS to do this.
I expect some of this may change a little with the flying club changes at the end of this month but that remains to be seen.
