Points + Voucher advice

First time poster so excuse any ignorance whilst I try get my head around this all & am looking for some advice please:
I'm looking to book flights from MAN to MCO for next earlish November (2026) for two adults and one six year old.
I have one companion voucher earned in March with the possibility of another one coming in March 26 but not guaranteed. I have 40,000 points saved up.
Can someone please help me get the best value out of my situation, any advice on the following -
when to book?
what to do (do I have to ring up? I do not mind travelling in economy at all)
using points against virgin holidays instead of flights?
