Ditching the 787s might sound logical from a simplification perspective, but VS would still need to acquire replacement aircraft for them and train up any crew that exclusively work 787s on A330/A350. Given the financials, it’s a lot of money that would need to be spent and might be difficult to justify at this time compared to retaining and refurbishing 787s (the oldest is now 10 years old).
The irony is that one reason why VS have A330s in the first place is because of the 787s being delayed for up to 3 years, though having A340s at the time helped as the A330 is effectively the twin-engined version of the A340 and there’s very little in it capacity-wise between the long-retired A340-300s and A330-300s when you look at fuselage lengths.
