Flying in Cattle Class on a 747 - will my Iphone headphones plug straight in for the IFE - or do I need a special Jack to convert?

They'll connect without any conversion needed. Depending on the length of the cord on the headphones you might want to take an extension cord with you.
We can get better, because we're not dead yet
Be warned though, the volume you will get in your headsets will be extremely high (but is about fine on minimum volume setting on the IFE) - you can buy adapters that lower the volume (presumably just a resister or similar) so that you have better control.
