Do we know what date/flight the first.......

......new refitted plane from LGW will be?

It says on the VA website that the 1st refit will be taking place during May 2012 but looking at that timelapse refit video that appeared a couple of weeks ago it seems they are well underway already on the 1st aircraft? (Barberella I think was mentioned somewhere)

If the refit is currently being done now then when should we expect to see completion?

There are quite a few threads in the forum about this, but as you say, the first a/c will be back in action during May and it will just operate the normal LGW/MAN flights, with no prior notice given of which a/c is operating which flight for security and operational reasons.
