Book one way reward now or wait for return to be on sale?

Hi!

Is it possible to book reward seats as two one ways? I want to go to a Orlando (4 of us) but the return date hasn't been released yet. Do you pay more taxes if you do it as two separate bookings and is it possible to do it like that? And worse case scenario, if I book the outward now and can't get a return when the date goes on sale can I cancel the outward trip and get all my miles and money back? Thank you.
