Looking to go to Australia for wife's birthday is there any way there with VS miles on a partner airline on a route that is actually doable with VS miles?
You could do VS to LA and then VA to Australia, however I hear that getting seats on VA is like finding hen's teeth! Alternatively you could look at Singapore Airlines, although not in business or first.
There's a plane at JFK, to fly you back from far away
all those dark and frantic transatlantic miles

Delta also fly LAX to SYD.

So what is the redemption amounts for business on delta like.?
You are getting into the whole special circle of hell that Dante didn't think about - the VS circle of redemption partners.
Couple I can think off to look at in addition to the above
VS to Tokyo then ANA and Air New Zealand
SQ to Singapore then SYD
VS to LAX then V Australia. /DL/Air New Zealand
VS to HKG then
You might have to look at VS reward to a point (e.g.LAX or HKG) then paid for flights from there.
Even when VS did fly to SYD reqards were like hens teath.
If you are going that far then it could actually be less complicated to do an ex-Europe routing and just pay cash
