I am trying to work out what the difference is between a companion ticket and just buying that flight on miles for the companion?
Is that not the same thing or am I missing something?
What are the advantages of booking a companion ticket?

They are not really the same; other than VS using reward fare buckets for all companion fares.
A companion voucher can be used with either a reward booking or a revenue booking. The companion just pays the fees/tax only in either case.
You would save having to spend extra points or money on the companion base fare when using a companion voucher.
