i'm looking to book a UC reward flight with points, but at the moment there's only UC out/PE return availability for the dates we need

unfortunately not flexible on dates, there were UC/UC a few days ago but being an idiot i didn't take them on the spot :|

if i book UC/PE for now, can i subsequently upgrade the PE with points if UC reward seats become available?

Yep, although you may need to pay some cash to get your PE fare to an upgradeable fare code (S or W).

I am in the same position myself for next July.

I'd book what is available and keep looking.
Even while you are away check daily.
Recent post someone bagged UC at the very last minute.
Where are you going? It has also been mentioned that US check in will sometimes convert a seat to reward availability at the desk.

Top tip. Hold what is available now free for 72 hours. They may have availability open up for return over the timeframe. Happened for me.... Also call FC don't use website. They seem to have a better view of flights than the website does.

thanks everyone

will try calling FC and also keep an eye on availability

it's for LHR-BOM - the end of the service was a surprise, now fitting in the trip before the service ends ties us down to fixed dates due to other commitments, otherwise it would have been easier!
