There is a very strong possibility that I and 3 other friends will be in Hong Kong for Easter. We are also considering a side trip either to Angkor Wat or to Guilin. We cannot leave before March 23 and must be back in HK by March 26 at the latest.

Any advice, comments, thoughts....?

Angkor Wat! - Absolutely no contest!
Guilin late March can be wet - the main reason to go is the cruise down the gorge - if its misty and wet you don't see much - you don't have time to wait for better weather!.
Angkor is unforgettable - remember there are a number of temples - the Vietnamese (edit : NO - Cambodian!) people are fantastic hosts.
