What about Newport/Huntingdon Beach - there are some better hotels in that area; or if you want real luxury, then Laguna beach area - there is a Ritz Carlton, St Regis. Speak to ChuckC as he used to live in that area and knows the locale well.

If you can handle the drive in Florida, Orlando, swing over to Tampa then loop around the coast, there is a nice hotel down in the keys called the http://www.azulkeylargo.com/

You're adventurous, want a road trip? How about fly to Chicago, drive to Boston and return? Chicago is ace. The area around the lake also, great trip across the NE states to upstate New York (beautiful) then into MA (beautiful) then to Boston (beautiful). Some great historic towns along the way.
Rent a winnebago and make it a scene with the Missus and parents on the cocktails in the back singing along! Go North through Canada and Toronto for an option, or further North into Vermont (also beautiful)? Total driving time in two weeks is probably 20 hrs or so (in a straight ish line that is!).
