Grouse Mountain is a nice day out if its warm, and Capilano Bridge across the road. There is a shuttle bus that goes there or you can take the sea taxi from waterfront and then a bus on the other side all for $2.50 or $1.75 I think if you're seniors.
If you like mooching, then Stanley Park is lovely and there is the aquarium there. Granville Island is nice to mooch for shopping as there is a huge indoor market and then specialist shops all round it, and nice places to eat. The Sandbar restaurant is a great place for lunch. Get to granville island using the little water taxis on false creek.
Gastown is good for a stroll and shopping, the place for First Nation art galleries. Good place to eat there is Water Street Cafe.
For other places to eat Joe Fortes Seafood & Chop House has a great selection of meat and seafood, and oyster bar - reservations essential and your concierge will be able to sort this. Also Keg steakhouse and grill, there are several dotted about - Yaletown, also on Thurlow opposite Joe Fortes. Usually don't need reservations for the keg. If you like Japanese food then Miku near the waterfront is excellent and Shu Raku on Granville south is great. If you like Chinese food then Kirin on Alberni is excellent, it's not in China Town, but is highly recommended and busy with both locals, including local Chinese, and tourists.
If you want something cheesey but really enjoyable to do, then I highly recommend the sunset dinner cruise around the harbour. It's a great night out, the buffet is good (usually beef and salmon), with some entertainment and the views as you go around the harbour are stunning. It's about 2.5 hours.
