Hong Kong/Sydney questions.........eg hotels

Had a search for Sydney hotels for example and either I'm looking in the wrong place or there's not much here.........

So,

Can anyone recommend anywhere to stay in either Hong Kong or Sydney?
Heard a bit about the Hilton for example in Sydney - quite a few pros and cons.
Do all the main hotels overlook the harbour?

Also, having initially booked to spend 10 days in San Francisco lasy year, found after 4-5 days, we'd seen pretty much most of it. I'm assuming Sydney is one of those places like Sf where there's a few things to see before you have to start going outside the city to se other things eg Blue Mountains, wineries, Gold coast etc...so, is this the case? If so, how long is generally recommended to stay in Sydney to take in most things?

Well we stayed in the Shangri la and the sheriton on the park when we were in SYD a few weeks back. The Shangri la was awful but the sheriton was not bad.

I felt once you saw the bridge, the opera house, climbed the bridge and did a habour cruise that there wasnt much to do after that
