Must admit we do fall into the B&S category - must admit that the flight does not constitute a major part of the holiday in my mind and therefore my expectations are correspondingly lower - As long as they sit us (2 ads & 1 chd) together and get us there roughly on time and in safety, I'll be happy.

If you booked direct with VS or through VH you should have a reference that will enable you to access the "Manage My Flights" on the VS website. This allows you to pre-select your seats , opinions about which can be derived from a use of the "Which Aircraft" (to find the type of aircraft, though being ex MAN it should be a 747/400 LGW/MAN Suite) and "Seat Ratings" tools on the V-Flyer site. About 60% (or is it 40%?) are made available in this way.
Closer to the time - well, 24 hrs prior to be exact - you should then be able to select your seats using the VS On Line Check In facility which opens up all the remaining seats save for the bulkhead and exit seats (which are only assigned at check in) and so you may be able to get a "better" seat.
