Does anyone know if and when Virgin will be releasing the cheaper UC fares for Miami in Easter time?
Easter might be iffy - it's a busy period of course and not as likely to feature in a sale. IIRC past sales that come out in January have date ranges that end before Easter and start again after Easter ...
There's a plane at JFK, to fly you back from far away

Hi there
we flew out UC in April this year. The sale which we benefited from started January 7th and comfortably covered this period (lowest price we ever saw advertised). Hopefully the same will Happen again. Just noticed that in the current sale Miami has just been added to the list....though only for Econ. Learnt now to just pop in at least once a day to view

I've just booked UC for LGW-MCO next August and the fares are half of what they were a little over a week ago. It appears MCO may have been added to the sale, but the special offers splash page has not been updated - it might be worth checking the Miami flights and not rely on the offers page.
It's always nice to have a surprise bill 5K less than I expected.

The current UC sale is only for flights until the end of June next year.
The reason for the big drop in the price of your fares to MCO is more likely to do with fare codes. The flights for next August are only just being released now, and for the first few days that they go on sale, it is usually the higher fare codes only, so J and D in UC. With the huge saving, it would seem that some Z or R fares have now been released, which is pretty standard practice.
