"The bubble" is the upper deck of the 747.
On aircraft out of Heathrow this is split between upper class and economy seating, and on aircraft out of Gatwick it is, with one current exception, all premium economy seating. On these Gatwick aircraft it gives the feel of a private cabin. Unfortunately (in the eyes of many) the refurbishment programme currently underway on the Gatwick fleet - one example of which is now in service, hence my reference to "one current exception" - the trade off for shiny seats and a whizzo IFE is a reconfiguration of the upper deck into a split of premium economy and economy.
