Hi there,
I am heading off to Barbados beginning of January in PE, as yet the seats are unavailable to Pre Book (90 days before departure?) If we are able to pre book them is it also wise to do the OLCI the day before to make sure you have the seats you have asked for, or should they still have them reserved for you if you check in at Gatwick 3 hours prior to take off? Only asking as I am travelling from the Highlands the day before and won't have access to the internet? I would appreciate any advise ):

You have to do OLCI at least 13 hours before your flight to ensure you get your pre-requested seats.

It's a good way to grab your seats and you can still check one or all your bags in the following morning if you wish.
