If you go into the Trip Reports sub-forum and put VS001 or VS018 in the Search Box above the reports, you'll get more. Menus may change but main meal for instance will always be variants of beef, chicken and pasta.

Not always - there was pork instead of beef on my VS201 a couple of weeks ago (which surprised me given the vast number of people who can't eat pork). And you quite often get a fish option in UC.

The 1 will almost certainly be lunch and afternoon tea.

The 18 will be a light breakfast (bacon rolls) after take-off and a full 3 course lunch service ~2 hours before landing.

Don't forget you can ask the crew to fix you up with something from the graze menu if a plate full of carbs (afternoon tea) doesn't tickle your fancy.
