Hi looking for some ideas/options.

We live 15 mins from Manchester airport and are looking to travel to Orlando next year. I can get 3 UC tickets Ex Dub for £2700.
We will be travelling with a toddler and would like to make the luggage side of things as easy as possible. Do we have to check all our luggage in at Dublin and/or could we have a stopover in Manchester(home) and take advantage of the fare and book luggage in at Manchester ?

Absolutely. You can take the DUB-MAN leg the day before then go home if you live close to Manchester and simply pitch up for the VS flight the next day. Three UC flights for £2700 is a brilliant price!

So can I leave all our luggage at home and just take it to Manchester on the morning of the MAN-MCO leg ?

Yes

One last question:

I'm searching Expedia and it displays the 06:30 Dublin-Manchester flight on the same day as the MCO flight, how do I change the Man-Dub leg to the day before ?

Try the multi-city option so

Day 1 - Dub - Man

Day 2 - Man - MCO

etc
