Either Hilton is good (head out to Templepatrick Hilton if your bringing your golf clubs!), and you get some cracking bargains too if the season is right.
Not been out Asia way yet, where most votes seem to be going - however my favourite "new" hotel would have to be the new Sydney Hilton (wasnt in the old one, but the multi-million rebuild is evident

Varying levels of "best" to different people/budgets too.
Outwith the larger cities which tend to be littered with good hotels, there are some gems to be found.
I was very impressed with the Radisson in Basle (so much so I booked a 2nd night , on what was meant to me a 1-night stopover driving around Europe), had booked the 1st night there because Id been to Oslo 8 months prior & was mightly impressed by the Radisson there (main one, near to bus-station).
One that wont get much mention - the "Grand Hotel" San Marino. Was there a few years ago & although the lobby etc could have done with some modernising, was a beautiful hotel with superb food, not to mention a Ukrainian waiter who was a riot.
Back to a smaller-bigger city with more choice - stayed at the Crowne Plaza in Madrid a few years back after getting a couple of free-flights out there, great choice. Due to free flights I splashed out a little extra for a junior-suite, got a massive corner-room & whilst it lacked view it had tons of character. Food was superb & the mezzanine bar overlooking lobby had a touch of elegance too it & was a great place to pass a couple of hours in the evening after dinner.
Best hotel meal? Had too many to pick out one - most memorable would be either Hilton Sydney last October or Sheraton Luxembourg (have had a couple meals here & am longing to return).
